Lately, I’ve been trying to meal prep my lunches, however, I know that it is super easy to make bland and boring food that I end up not wanting to eat by midweek. So I want to make my lunches as interesting as possible. One of my favourite take-outs is Mexican and I love getting the chicken burrito bowl so I thought, why not make something I really look forward to eating and meal prep it?
I found this to one of the easiest and tastiest lunches I’ve ever made. I don’t think I will ever tire of taco chicken with black beans.
Above are the ingredients I used, note I only used one packet of the burrito seasoning and only one tin of the black beans.
Essentially all I did was brown the chicken and season with the burrito seasoning and some salt & pepper. Then in the same pan with all the leftover burrito seasoning, I sauteed the capsicums and onions. While I was doing this I prepared some brown rice in the rice cooker. Last I put a serving of the chicken, capsicum, onions, some beans and some rice into a plastic container. Since I made enough for both my fiance and me, this made approximately 10 serves.
I usually put Monday & Tuesday’s lunches in the fridge and then freeze the rest of the weeks’ meals.
This makes lunch as easy as popping the container in the microwave at work for a minute or two and then top it with some avocado (I found half an avocado to be perfect!) and I get to have a filling & tasty burrito bowl without going out or spending the cash.
All in all, this was super simple and really cheap to make, since all the ingredients are pretty affordable. I will definitely be re-doing this again soon.

I’ve found that incorporating affirmations and being more grateful for the little things in life, are some of the easiest ways to bring light into any day. Similar to the effect of simply smiling to trick the mind into a happier disposition.
There are a lot of other self-care practices that I have been trying out to bring more calm and joy into the mundane and stressful days in my life. Such as taking days(or nights) to pamper myself, for example, last night I poured some warm water in a large bowl with some of my favourite Lush shower gel and dipped my feet, then scrubbed, moisturised and painted my toes, whilst reading a new book. Taking that time made it a lot easier to tackle the week ahead, which for me is filled with meetings, social outings and parties galore.

I’m sure I’m not alone in that when the new year rolls in I mumble off a list of grand goals and achievements I want to conquer in the new year and then come January 1st, I have yet to write any down or even formulate a way for me to begin to tackle them. Well 2018 is here and I’ve been sitting on my list of goals and achievements for well over a week now and I think it’s worth etching them in stone and start making some progress.
I AM repeat AM going to lose the weight. I’ve been on a weight loss journey for about 6 months now and have already lost roughly 8kg (17 lbs), however, I still have ways to go. The main focus of my weight loss is for my wedding next year even though I’ve been wanting to make some serious adjustments to my diet for a long time now. My goal is to exercise or practice yoga at least 3 times a week and I aim to lose roughly 15 kgs before September this year when I go to try on dresses for the first time.
Another health-related resolution is to continue being dairy free. I made the decision to go dairy free several months ago and the changes it’s made to my skin, mood, weight and energy levels has been astounding. So I really want to dedicate myself to avoiding dairy products.
I’ve got a lot of savings goals for the year, I have a wedding to save up for, a house to pay off and maybe a holiday later down the track. My pan to conquer these savings goals is to drastically minimize my miscellaneous expenditures. Things like coffees & eating out and instead focus my money on the things that bring real value and purpose into my life.
There’s a lot of things people can do to improve their overall wellness and general enjoyment of life but here are my goals to make 2018 a year with as little unhappiness as possible. I want to surround myself with people who support and respect both me and my fiance. Life is too short to be surrounded by toxic friends. Secondly, I want to spend more time on me. Sometimes I find that it is a little too easy to get swept away in the general busyness of life, bills, chores etc and I feel that 2018 is a year that I come back to my roots and do the things that bring joy into my life, such as blogging & learning.
I’m a strong believer that there is not only one time a year that you can make a change, so it is likely that my priorities may shift next week, month or year. Personally, taking the time to understand what you want and how you can make changes in your life to get there is vital to creating a happy life.

Now I had planned on setting aside some time this weekend to write a more interesting post, but unfortunately, life is life and gets in the way.
To bring you up to speed, I was recently told that I have a severe iron deficiency and the results of this deficiency can make me more fatigued than I ever thought possible. For the last month, my doctor has had me on supplements, but this week hit hard. I was using all of my forcible energy to stay awake and it became painful to be awake. I liken the feeling to when you wake up in the middle of the night and start walking and your mind is waking up but your body is still asleep. I started to worry that I would fall or trip while working and thus, headed back to the doctors.
Since I work full time and have quite a lengthy commute, and not to mention the fact that I pretty much collapse when I come home, my weekends are my prime time to get anything done. This meant expending all of my limited energy as it was to going to doctors and even the hospital! eek! I’m fine, just exhausted. I left the hospital pretty quickly and met this fantastic nurse who gave me some great advice.
Hopefully, my iron levels will sort themselves out soon, because boy would I like to actually feel like a 21 year old!
This post is probably sounding like the longest excuse for a lack of a good read, but I don’t think I would’ve been capable of publishing anything more worthwhile whilst being this fatigued. I hope you forgive me.
